BBQ Pork recipes: Swine to make you swoon!

BBQ Pork recipes and I mean primarily pulled pork, are probably the pinnacle of BBQ. I say this despite my Texas upbringing and my love for beef brisket. Throughout history, and across the world, no animal is more prized for its flesh, more fully utilized or more respected than our friend Mr. Pig. This is especially true where pig meets wood smoke.

Pork recipes can run the gamut from the aforementioned pulled pork and BBQ pork shoulder, a stronghold of bbq in the Carolinas, to the whole hog, something to make any grown man cry, also a Carolina specialty.

But what other items of pure porcine pleasure are there? Well, spareribs for one. (or two if you consider the baby back as well...)

How about the dainty little tenderloin?

BBQ pork loin recipes may not have the "pedigree" of other bbq recipes, but it makes fine eating, even if it's not messy enough. (In fact, the tenderloin- brined overnight, smoked, then chilled, sliced and served on soda crackers is great with beer as a snack.)

What about the pork belly? While it's not technically a bbq pork recipe, I hold bacon up to be one of the world's great foodstuffs, and will therefore provide you with the recipe and the technique. And, what about the humble pork chop?

Pork chops are not automatically something you associate with BBQ, but if you travel 65 miles north of Austin Texas to the sleepy little town of Llano, you will find Cooper's BBQ- home of the "big chop"

Coopers makes all of the classics, in addition to being one of the few places that serves cabrito- or baby goat- in this part of the state.

They also make pork chops. But not just any chops.

These monsters are beautifully smoked cowboy style over hardwood with noticeably large granules of ground pepper and salt. A thing to behold.
