Smoked Duck Egg Rolls
These smoked duck egg rolls are simply one of the best appetizers that I know of. You can also use leftover brisket to make smoked beef egg rolls! This recipe is very easy, but there are a lot of steps. So feel free to make the onions, duck, and slaw the day before and just assemble at the last minute. Then it's a snap!
Recipe:
4 c. chopped smoked duck (pull duck meat and pulse until fine in cuisinart) or smoked brisket2 c. Cheddar Cheese
2Tb.
Rib Rub
4 c.
cole slaw
1/2 cup chopped cilantro 1/2 cup chopped pickled onions (onions marinated for 1 hour in
chipotle vinegar used for slaw)
Mix all of the above ingredients together. Use ¼ cup packed filling per egg roll wrapper. This should make about 16 egg rolls, so you can divide the recipe as needed. Serve this with PF Changs bbq sauce for a killer appetizer: that I found here! Or use your own bbq sauce
(or mine!)
and mix in a little hoisin. Enjoy!
