BBQ Pork Butt

BBQ pork butt is the easiest, most forgiving and easily one of the most delicious bbq pork recipes or bbq recipes around.The tough part here, is tending a fire that will need to go for 18 hours or so.
As with brisket, you can cheat a bit here- smoke the shoulder ( butt) for 8-10 hours or so, and then wrap in foil and shove into the oven to finish. You have given it adequate smoke for flavoring and just need to finish with the tenderizing.

Here we go- in steps. Step# 1 - Find your meat. For some of you this easier said than done.. You are looking for a bone-in pork butt. Or a bone-in pork shoulder. It is cut from the same part of porky the pig. You want bone-in as it gives far superior results. Look for the Boston butt (preferable) rather than the picnic. Step #2 – Rub your meat. Pause for sophomoric jokes. You can use this rub, my rub, or your own. The thing to remember as with brisket, or prime rib, this is a big piece of meat – so don’t be shy. You should put a lot on the pork shoulder. Step # 3- Smoke or smoke/roast ( or roast only- the results will not be the same, but quite good and it’s your pork afterall) At 200 degrees, you are looking at about 18 hours of total cooking time. As with anything, you may have a preference to pull the meat earlier, but when I make it, you should be able to stare at the meat and it should fall apart.The bone will easily come from the meat.
Step# 4- Pull. With gloved hands, pull the pork into strands. How chunky is up to you. In the Carolinas they will mix in their vinegar based sauce. I like to mix in a bit of my favorite bbq sauce and a bit more of the rub to taste. Now. EAT. If you must tear yourself away before finishing every scrap, the pork reheats very well. To serve, you can go with a pork plate, or the pulled pork sandwich on a hamburger bun with coleslaw on it. That is living. (this pork recipe also makes surprising good carnitas- no surprise there at is the same cut for carnitas. Any leftovers, I chill, then pan fry until crispy edges form and then serve with all of the Mexican fixings- deelish)
