Beef brisket rub: two styles, both great

Beef brisket rub can be as simple as one or two ingredients, or a whole bunch. In Texas bbq rub, as with many things less is often more.

As in any recipe rub should be made with fresh ingredients! Also, store the seasoning mix in an airtight container.

Recipe #1

2 cups Kosher salt

1 cup medium grind black pepper

Mix.

(No, I am not kidding. 2 ingredients. As I have said before, there is no better seasoning in my mind for brisket or beef period, than simple salt and pepper. But the proportions are key.)

I mix up quite a bit of this and store it in plastic containers, and use it for brisket, steaks etc.

However if you are adventurous, or want a little more flavor variety the next rub is a great one to try:

Recipe #2

1/2 cup paprika

1/4 cup chili powder

1/4 cup salt

1/2 cup medium grind black pepper

1/4 cup garlic powder

1 Tb. cayenne pepper (optional)

Mix all ingredients together.

For either recipe, season your brisket very liberally! The meat is dense and very thick especially at the deckle.

In fact, I rub the meat all over very liberally and then build up about 1/4-1/2 inch on the fat cap. Most of this will be cut away, but it will serve to drip into and season the meat.
