Chicken Buffalo Style

Chicken buffalo style. I love, love, love, buffalo wings.

Even had them at my wedding years ago.

Classy I know.

But, here's the thing with wings:

1. They are one of the fattiest parts of the bird.

2. To add insult to injury, they are then fried which amps up the fat and makes a hell of a mess.

3. Wings, because of the demand, have gotten quite expensive and require a lot to fill you up, especially if you have a family.

So what to do?

Easy-- make a whole chicken buffalo style!

And bbq it.

And, since you can always buy a whole chicken cheaper than chicken parts, it is far more cost effective.

In fact, at the time of this writing, a whole chicken on special was $.89 per pound.

So a whole bird cost about $4.00 Wings, on special, were $1.69, and a pack that would only feed me and maybe one of my sons was $8.00!

Now for the technique:

This is one bbq chicken recipe that I prefer a gas grill for. I use a Weber Genesis Silver A Gas LP Grill - Black.

Cut the chicken in pieces.

Make your favorite buffalo wing sauce. Mine has, and always will be off of the Franks Red hot bottle. Although I substitute butter for margarine as margarine scares me a little. To save you looking here is the recipe:

Heat your grill- I put all of the burners on low. Once the grill is pre-heated, add every piece except the breasts. (you don’t want them to dry out.)

Cook for 25 minutes. Turn the chicken and add the breasts. Cook for approximately 20 minutes more.

Toss with sauce. Serve with blue cheese, and celery sticks, of course.

You can eliminate more fat, by omitting the butter altogether.

If so, only brush the hot sauce on the chicken buffalo style lightly!
