Coca Cola Ribs: The real thing!
I first heard about Coca Cola Ribs when I spent some time visiting my sister in Georgia. (No coincidence here that Atlanta is Coke's headquarters) So, like a bbq obsessed foodie, I investigated. This is a relatively unusual bbq pork ribs recipe, whereby Coke is used as a seasoning as well as a rib marinade.
Some people I talked to said to boil the ribs in Coke (yuk. this would just leech out the pork flavor, and you should never boil ribs anyway.) Some said to simply marinate them. Some recipes said to both marinate the ribs and to baste in Coke. In my recipe ribs are marinated in Coca Cola and then smoked (or grilled) Finally for this bbq pork ribs recipe, Coke is reduced until it is coke syrup, and brushed on the ribs to give them a coke glaze. For this ribs recipe, I used wild boar ribs from Texas, but you could use spareribs,pork baby back ribs or a pork country style rib. If you'd like to read about rib types in general,

Coca Cola Ribs
1 rack of Pork ribs, your choice, or approx 3lbs of pork country style ribs1 2-liter bottle of Coke Pork Dry Rub 1. Season ribs generously with
pork dry rub
(it will come off, but it helps give the right proportion)Pour enough Coca cola over the ribs. I use a vacuum sealer, to make it easier, but any way will do. Marinate for at least 24 hours.
Remove the ribs from the marinade and apply more pork dry rub. Prepare your smoker and smoke the ribs at approx 225 degrees for 4 hours, basting hourly with Coke. Or, if just grilling, grill ribs over medium to low heat until a nice color develops. You can leaeve them on the grill, covered for approximately 4 hours until you reach your desired tenderness, or alternatively, wrap the ribs in foil and put in a 200 degree oven for about 4 hours or until desired tenderness is achieved. Meanwhile, put about 2 cups of Coca Cola in a saucepan and bring to a boil. Reduce until you have about 1/2 cup or it is a syrupy consistency. Keep warm.
Now it's money time. Remove the Coca Cola ribs, and brush on the syrup. Now, apply more rub to make a bbq pork ribs recipe that is sweet, and also savory. BBQ sauce is optional! <<>>
