Cornbread Recipe Mexican Style
This cornbread recipe mexican style, is a sweet style cornbread, so not Southern style, and is really delicious. It is the perfect balance of sweet and sassy - and easy.Because it is so easy, it will replace any cornbread mix on your shelf!
Recipe:
1 cup all purpose flour1 cup yellow cornmeal 1 tsp. salt 4 tsp. baking powder 1 egg 1 cup milk 2/3 cup sugar 6 Tb. melted butter 1 4oz. can diced green chiles 1/2 can creamed corn 4 oz. grated cheddar Grease a 9" cake pan. Preheat oven to 400 degrees. Place dry ingredients in a bowl and mix with a wire whisk to distribute powder and salt. Beat egg into milk. Add butter. Add mixture to cornmeal. Mix until combined. Stir in chiles,corn and cheese. Bake in a 400 degree oven for 30 minutes until inserted toothpick comes out clean. To make a sweet mexican style cornbread, increase baking powder by 1 tsp. Also, add 1 4oz. can diced chiles, 1/2 can creamed corn, and 4 oz grated cheddar to batter. Enjoy!
