Pickles Fried - What?

Pickles Fried.. In the South, we fry anything, so this should not be such a stretch. I am not sure where they originated, but one of the famous spots for them is Threadgills in Austin, Texas.

The versions I have tried have been battered like a piece of fish and chips. This works great, but making batter can be a pain, and somewhat messy.

So, in the following recipe, I have gone the way of cornstarch. Cornstarch is sometimes used to fry calamari and gives a nice crispy coating.

Also, the following recipe fried pickles get a starch/egg/starch dip. This works really well, especially if you can buy a thicker cut pickle.

But, for my taste, just a dip in cornstarch alone is fine to give a great result. Also, in this recipe the starch is "spiked" with ranch dressing powder for an extra trashy flavor element..

Recipe

1/2 cup cornstarch

2 Tb. ranch dressing dry mix

2 eggs, beaten1/2 cup milk

1/2 cup cornstarch

Frying oil

Deli sliced pickles

Prepare your coating: Mix the dressing mix with one of the cornstarch amounts. Mix the milk and eggs. Preheat the oil to 350 degrees.

Dredge the pickles in the non-seasoned cornstarch, then the eggs, then the seasoned cornstarch.

Deep fry until golden brown.

Serve with ranch dressing, or as my kids prefer, a mix of mayonnaise, mustard and ketchup to re-create a "burger feeling." Enjoy!
