White chicken sauce: an Alabama favorite!

White chicken sauce may sound unusual, but it is really quite good! I heard about Alabama white sauce before and frankly it made me a little nauseous.

But having relatives in Alabama, I got the opportunity to try some 'Bama white bbq chicken and it is really good. It is hard to find outside of Alabama, but you can find it there, especially in the northern part of the state.

Credited to being invented by Gibson's BBQ, the sauce replaces the usual ketchup with mayonnaise. I know. Strange. But this is the state for boiled peanuts, so you have to have faith.

My take on the sauce mixes in a bit of sugar and garlic, and uses two vinegars. Come on, try it...

Recipe: White BBQ Sauce

1 1/2 cups good quality mayonnaise, like Hellmans or Best Foods

1/2 cup apple cider vinegar

1/2 seasoned rice vinegar

2 Tb. coarse grind black pepper

1 tsp freshly chopped garlic

Mix all ingredients together. Keeps in the refrigerator up to one week
